At End of Days Distillery, we’ve always believed in honoring the traditions of craft spirits while pushing boundaries. Our newest release, Castillo 1815 Añejo, is no exception—a beautifully aged agave spirit that brings together old-world methods and our distinct coastal character.
Aged to Perfection
What sets Castillo 1815 Añejo apart? It starts with 100% blue agave, traditionally fermented in open air and double-distilled in copper pot stills. From there, we rest the spirit for a minimum of one year in #3 char American oak barrels—each of which previously held our award-winning Castaway Series Rum. The result is a complex, luxurious spirit that captures both time and terroir.

Expect an elegant profile from start to finish:

What’s an Agave Spirit?
While Castillo 1815 Añejo shares its roots with tequila, it’s made outside of Mexico—right here in Wilmington, NC. That’s why it’s referred to as an agave spirit. Unlike many mass-produced tequilas that rely on additives and immature agave, our Añejo is crafted using only fully mature blue agave and time-honored processes that bring out the pure, expressive flavor of the plant.
